A lot of folks "hate drinking water", because it "tastes bad". It's no wonder, tap water is filled with a lot of chemicals. I have a friend that is a civil engineer and works with municipal water systems. He said you would NEVER drink the tap water if you really knew what's in it and how it was processed. DIY Homemade Protein Bars










On The Go "Food":

Lots of folks do "dash board dining", swinging through a drive through and eating whatever it is they serve, over the steering wheel. This presents very serious health risks due to "bad fats", calorie laden, fiber stripped, processed, chemical brewed "foods", that have little or no whole food value to them.

Some have tried to be a bit more prepared and health conscience, buying protein or meal replacement bars. After spending a "fortune" on protein bars, that are "subpar" as far as ingredients and taste go, I came up with my own DIY protein "bar" recipe. (see below) It replaces protein bars bought at the store and all the "junk" in them.

At least when I make these I know the ingredients are "whole foods" and "good for you" :-)

I have a friend that has and "aversion" to the "kitchen" and if I even mention an oven, it's too "complicated"! LOL It really doesn't take long to make a large batch, bake, cool, cut into "bars" and freeze in gallon ziplock. They fit perfect into a "snack" ziplock bag for on the go. Try the easy basic recipe below and add what YOU like. (flaked organic coconut, pecans, dried cherries, mix it up!)

Basic Recipe: 

Mix Dry together:
4 cup old fashioned oatmeal
1 cup whey protein powder (I use True Whey)
1/4 cup cocoa (can leave out if you don't like chocolate)
1 cup organic coconut sugar (it is low glycemic - won't impact blood sugar negatively - can buy at Wal-Mart)

Mix "wet" together with mixer (or by hand) until smooth:

1/4 cup coconut oil (melted)
1 cup almond butter (room temp)
2 TB vanilla extract (or could add peppermint extract or rum extract, whatever you like)
2 egg whites

Combine the wet & dry ingredients, by hand, mix thoroughly. You can add little unsweetened almond milk if necessary to bring it together, I don't, but you may want to, in order to "spread" it. (it should be "stiff" but movable)

Spread & press into pan, working to spread evenly into greased (with coconut oil) large cookie sheet
Bake at 350 degrees 20 min or so, until dry to the touch. (not much longer, or will be too dry)

After they cool for 5 minutes or so, I cut with a pizza cutter, makes it super easy!

Makes 18 ish- depending on how you slice them. After cooled I slice into bars that fit into a "snack size" ziplock, perfect to take on the go. I like to "flash freeze" the sliced bars, so they don't "stick" together. Then put them into gallon size freezer bags until ready to eat.

Chocolate / Pumpkin bars

use all above dry & wet ingredients &....

add to "dry" ingredients:
2 TB cinnamon
1 cup coarsely chopped walnuts
1/4 to 1/2 cup dried cranberries
optional 1/4 cup finely chopped crystallized ginger

add to "wet" ingredients:
3 total egg whites
1 can pumpkin puree 

FYI: I now use a can of pumpkin in every batch- you could also use applesauce. But I like the pumpkin for added nutrition / beta-carotene)

I also now add 1 cup Ghirardelli Dark Choc Chips (can get BIG bag at Sam's Club will make many "batches"),  & a cup of chopped walnuts to every batch. 

Makes 20ish bars - depending on how you slice them. :-)


These are pretty yummy and very filling! Works great as an emergency on the go breakfast.

Yummy Healthy Snacking...











Are you really hankering for a healthy snack?
Then here are some simple suggestions for steering clear of scams like the ones mentioned above:
Veggies– the real thing: If it’s vegetables you want to snack on, then make it vegetables, not potato-flour chips! Carrots, peppers, celery – all these veggies travel quite well and can be easily prepped at home for any snack bag.

Chips - When you gotta have a chip you gotta have a chip. A chip I love here in Texas is called Beanitos. They are organic, no corn, gluten free, made from beans (pinto or black, depending on the flavor you get) High in fiber so they won't "mess" with your blood sugar as bad as regular chips. If you want a corn chip beware, corn is one of the highest chemical laden crops there is, so go organic! Trader Joe's has a terrific Organic Blue Corn chip, very high in ORAC value. More bang for your nutritional buck. Just beware, ALL chips are high in calories, so count them out onto a serving dish rather than eating them out of the bag!

Forget the microwave popcorn! Can be Dangerous to your health!  
Yahoo had an article couple years ago on the Four Dangers of Microwave Popcorn. One of the dangers Perfluorooctanoic acid (PFOA) in the lining of the popcorn bag has been linked to infertility and cancer. Some popcorn manufacturers have discontinued use of this chemical, but not all. Heating the popcorn releases the PFOA from the bag into the kernels. Worse still, PFOA from that bag of popcorn you had when you were 15 may still be in your body when you are 25, because PFOA builds up in the body and is difficult for organs to detoxify and remove. YIKES!!!

Get an air popper instead! Trader Joe's has an organic popping corn, drizzle with a little (1 tsp or so) of coconut oil and a dash of salt..mmmmm Just a couple of cups of air popped is a terrific healthy snack. 
Nuts: Cashews, pistachios and almonds are now widely regarded as “health foods.” Watch out, however, for ones with flavor-enhancing additives. (Actually, nuts taste great with nothing added other than, perhaps, a bit of sea salt). Remember a small handful is a "serving"!
Fruits: Apples, bananas and oranges look as if nature designed them just for taking on the road with you. Bananas are lower glycemic, or less of an impact on your blood sugar if eaten a little on the "green side", to reduce the sugar content.
Homemade goodies: Do you make your own popcorn, cookies, bars or fruit mixes from healthy or organic ingredients? Then make an extra batch to take along with you, and you’ll avoid becoming a hungry ‘hostage of the highway’, buying cheap chips and fake veggie products from convenience stores and rest areas vending machines. T- TIME- if you observe ANY of these signs call 911 immediately.

Stroke symptoms include:

Sunny Days - Harmful Rays










The Heat is ON -  

Well, it doesn't seem to matter where you live anymore, the scorching summer is upon us. Here in Southwest Texas the "humidity" is also factored into what's fondly referred to as the "heat index".  If its not hot where you are yet, enjoy the last vestige of spring, summer IS coming!

With that said, the heat & sun effects just about every facet of life... for months. The sun shinning brightly causes a multitude of problems for us humans: sunburn, dehydration, squinting eyes and poor air quality, to name just a few. What's worse when summer is "over" the effects can remain on & in our bodies for a lifetime. Sun damage to the skin is cumulative, meaning it continues to "add up" over time. So the effects of a bad sunburn as a child or teen, will "follow" us throughout the rest of our life. Making us more prone to skin cancer.  So we want to slather on lots of sunscreen right?

Sunscreen - RIGHT or WRONG?

True or False: Sunscreen is the best protection from skin cancer.

The correct answer is "it depends". It depends on what ingredients the sunscreen contains.


MANY  sunscreens on the market have potentially harmful ingredients!!!

(CNN May 16, 2012) -- Twenty-five percent of 800 tested sunscreens are effective at protecting your skin without the use of potentially harmful ingredients, according to the 2012 Sunscreen Guide released Wednesday by the Environmental Working Group.

To make the watchdog group's safe list, sunscreens must be free of oxybenzone, retinyl palmitate (a type of vitamin A), not have SPF above 50 and protect against UVA and UVB sunrays.


Here is a quick list of things to look for in sunscreen:


-Broad Spectrum -  means the product protects against both UVB rays that cause sunburns and also UVA radiation that causes premature skin damage and aging.

-Use a sunscreen with a minimum of SPF 15 and a maximum of SPF 50;

--Look for a sunscreen that has titanium dioxide & zinc oxide.

--Avoid products containing oxybenzone and retinyl palminate if you're concerned about potentially toxic chemicals;

--Choose lotions versus spray sunscreens for a more evenly distributed protection.


-Remember:  apply at least 2 ounces of lotion (about a shot glass full) and reapply often. The sun breaks down the ingredients in sunscreen that protect your skin. Experts recommend reapplying every two hours, or after swimming or heavy sweating.

Along with sunscreen are great clothing companies that make UPF (Ultraviolet Protection Factor), clothing. Everything from hats, shirts, skirts, pants that have a UPF of 50. They can be a bit "pricey" at times. However, if you watch you can find deals on them. Thanks to a friend who told me about it, I found a great big beautiful UPF hat at Ross for $9.99, with a UPF of 50. That's a "steal" usually you would pay between $30 - $50 + for one similar. Wearing UPF hats & shirts are a  lot easier than slathering on sunscreen every couple of hours!

With all that sunscreen and hats how is one to look "sunkist" with a beautiful tan?

Is your thyroid stressssssed??










Are you stressssssed?  Is your Thyroid?


Who isn't stressed is the question? So much to deal with these days. It ain't your Grandma's world we live in today. A lot of folks feel like they are "peddling as fast as they can" and getting nowhere when they realize they are on a "stationary bike" in life! HA!

So stress is something we all must contend with in these fast paced times. Problem is the body ain't necessarily "keeping up" and various systems in the body can be "overworked and underpaid" in nourishment. Thyroid is a master gland that takes a beating when it comes to stress. So how can you determine if you have thyroid issues?

First Things First:

First you will need to see your doctor to determine if you do have a thyroid problem. Which can be tricky as the "normal range" is not necessarily "normal". If it is determined you are "border line" or there is not a problem, ramp up the health of your thyroid as a preventative. 

Feed Your Thyroid: 


There are many foods and nutrients that can nourish thyroid.
For example Brazil Nuts - which contain selenium, a trace mineral, that in small amounts benefits the thyroid. Just 2 Brazil Nuts a day contain recommended amounts. They are delicious and remind me of the "meat" of a fresh coconut in texture and taste.



Also seaweed or kelp - which contains iodine. For some people that may be something they are "missing". Approx 12% of the population is deficient in iodine. Now I know seaweed is probably not on your shopping list, but roasted seaweed seems to be the most accessible form. It stores nicely in the pantry, with a long shelf life. It is salty and tastes pretty good in my opinion.
"Almost" like potato chips :-) Humor me, that's the closest thing I'll get to one!

Or you may have more serious issues & suspect you have a sluggish thyroid. In many situations, much of this can be attributed to STRESS and lots of it! Have you ever heard the song that goes something like "the knee bone, connected to the thigh bone, the thigh bone, connected to the hip bone..." The body is all "connected", it has no "fences".


How Stress Affects The Thyroid: 
When we are faced with stress, our bodies go into "fight or flight" response and certain hormones are released by the adrenal gland, hormones that would give the body a burst of energy and strength. Today as a result of stressful days at the office, a traffic jam on your way home, and faced with it when we get home, it seems we are always in "fight or flight" mode.
